My eyes are the mirror of my soul just like my face is the mirror of my diet and my subconscious battles. No one has ever shown me this mirror so I had to discover it all on my own.

People who don’t have to live without gluten in their diet are usually pretty confused about what gluten is and which foods have it.

I’ve written this letter a few times since I figured out my celiac’s disease in July 2011, so I thought i’d write it publicly for once.
